I need help switching round door knob handles of an old type lock set to level type handles?

old building with full mortise lock sets that have round door knobs on them. I have been asked to switch the handles to brass finish level type handles. I don't want to change the whole full mortise lock set out.
Actually probably would not find a full mortise lock set that would fill the opening in the wood doors. There are 17 of them and they lock sets are so old they have the skeleton key option on them to dead bolt the doors as part of the lock set. Also is there a way to get the skeleton keys?

You shouldn't need to TOUCH the locks. Removing the knobs and installing handles in their place shouldn't even require opening the door. The fact this question makes since to you tells ME that your are not qualified to GUESS what will fit in the openings.
